I am constantly looking for new meal inspiration for my littles and I bet you are too so I have decided to start a new blog series called MIni Meals where I feature different things my two littles have been eating lately. I focus on making nutritious and fun plant-based meals that incorporate Edith and Alder’s favorite foods along with some new foods and/or preparations.
Dinner 1: Pizza chickpeas, butter lettuce salad with avocado and French vinaigrette and roasted fingerling potatoes.

- 2 teaspoons olive oil
- 1 shallot, chopped
- 1 can chickpeas, drained & rinsed
- 2 tablespoons tomato paste
- 2-5 tablespoons water
- sprinkle of fennel seed, oregano and garlic powder
- 1 tablespoon garlic, minced
- big sprinkle of nutritional yeast
- salt and pepper to taste
- 5-6 leaves of basil, chopped
I heated up the olive oil, added the shallot and sautéed for a few minutes. Then I added in the remaining ingredients (except water and basil) and stir to combine and then I added water as necessary to achieve desired consistency; I used around 1/4 cup. I cooked this all for a few more minutes and then I turned the heat off and stir in the basil. Enjoy!
Dinner 2: Satay tofu over rice noodles with a drizzle of peanut sauce and a side of broccoli and heirloom grape tomatoes.

• 3 garlic cloves minced
• 1 inch grated ginger
• 1T rice vinegar
• 1/4c tamari
• 2T date syrup (could use coconut sugar)
• 1/4c peanut butter
• 3t toasted sesame oil
• 3T hot water
Whisk together and toss with tofu cut into 1/2in squares. Marinate for 30 minutes. Bake at 350F for 35 minutes. Toss and broil for 5 minutes.

- 2 heaping tablespoons peanut butter
- 1/3c hot water
- 1/4c coconut aminos
- 1T tamari
Whisk until smooth.
Dinner 3: Field Roast “sausage”, sautéed zucchini, peach and berbere creamy carrots over jasmine rice.

- 2lbs carrots, peeled and chopped
- 1-15oz can coconut milk
- 1 teaspoon berbere spice
- salt and pepper to taste
Steam the carrots. Place everything in a blender and process until smooth.
I’ll be honest the first two meals were gobbled up but the last meal wasn’t so popular. Edith and Alder just couldn’t get into the carrot puree and rice but they did enjoy the “sausage” and the peach.
